Chatpata Pineapple Syrup is my shortcut to making great mocktails and cocktails.
Mocktails are very refreshing and great mood changers. The non-alcoholic mix of fruit juices with soda or any other drink mix is invigorating. During summer season whenever I return from work all tired and feeling thirsty, I would yearn for something fruity, sweet and cold. But feeling drained from all the heat I would not be in the mood or have the energy to make a mocktail from scratch. I would resort to a store bought soft drink or a cold water from the refrigerator. But wanting to have my mocktails with minimum effort led me to make this fruity and chatpata pineapple syrup. Pineapple is a kind of fruit which works with most of the combinations, mocktails as well as cocktails.
About Chatpata Pineapple Syrup
The chatpata pineapple syrup as the name suggest is chatpata and sweet in taste. Chatpata is an Indian tangy taste which is different kind of tangy. This syrup also has a salty & tangy taste from the salt and lime juice added to it. The pineapple syrup is concentrated in flavor and taste as they have to be diluted with other drink mixers. Many times people buy a store bought syrup and use it, but I highly recommend to tryout this recipe and see the difference in the taste and the quality of the homemade syrup. I can assure you that the homemade syrup will win you over every time.
Chatpata pineapple syrup makes a great syrup for cocktails as well. You can try it will plain vodka or any other alcohol of your choice.
This recipe makes around 3 to 4 cups of chatpata pineapple syrup. This quantity of syrup can make upto 7-8 glasses of mocktails if you are using tall mocktail glasses. But if using your regular size glasses than the number of mocktails will be around 13-14 glasses. I usually make this syrup in advance, fill it in a glass jar and store it in the refrigerator. It remains in good condition for several days. This way I can also have something different to offer my guest with minimum of effort and time.
To make the mocktail more healthy I have added sweet basil seeds or as they say in India, Sabja seeds. Sweet basil seeds / Sabja seeds is very popular in India. It is consumed to a larger extent during summer season. It has lot of health benefits, it is high in fiber, a good source of minerals and a great plant based omega-3 fat, among other benefits. These seeds are easily available in Indian and asian stores outside India or also online.
As a side note, you can also use this syrup to make mocktail pops.

Ingredients
750g or 4 cups chopped pineapple or 1 large pineapple chopped
375g sugar
2 tsp salt
2 tsp chat masala
1 tsp pineapple flavor
Club Soda or Ginger Ale
3 tbsp lime juice or juice of 3 limes
¼ tsp yellow food color (optional)
Directions
- Grind pineapple pieces to a fine puree consistency.
- Next in a pan pour the pineapple pulp, sugar, salt, chat masala, pineapple flavor and lime juice. Blend everything and cook for 10 – 15 minutes on medium flame.
- At the end when the mix had become thick syrup consistency turn off the heat and keep it aside to cool. At the end the syrup will have reduced to 3 – 4 cups. Pour it in a glass bottle and refrigerate it.
- After syrup has cooled down, in a tall glass add ice, cubes or crushed.
- Then pour chatpata pineapple syrup, around ¼ cup.
- Then add sabja (sweet basil) seeds on top.
Note: Soak the sweet basil seeds in water for about 10 minutes before use. - Next pour around 275-300ml club soda or ginger ale.
- Garnish with mint u0026 lime slices or any toppings of your choice.
- Place a straw and you Chatapata pineapple mocktail is ready to be served.
