Masala pav is a spicy and mouth-watering Indian street food. It is a close sibling of the more famous Indian Pav Bhaji, though much easy to make.
India is a place of unlimited variety in street foods. Every state has their own variety and their own flavors. And those dishes which are common across India taste different as you travel from one region to another. Each region adds its own flavor and twist to the dish. Masala pav is one such street food. It is spicy, buttery and mouth-watering. For some people, it is also eye-watering. It is a very quick and easy recipe that takes only half an hour of your time to prepare.
Pav Bhaji and Masala Pav are two very famous fast food dishes in India. Outsiders might confuse these dishes, but Masala pav is not a Pav Bhaji.
My Inspiration for Masala Pav
My husband’s craving for Indian street food every-time he visited me in India always intrigued me. After coming to USA, I finally understand why. I have been searching for a place here that will give me the exact experience of Indian street food that I and my husband grew up with. But mostly I have come across watered down flavors so far. So I started preparing these dishes at home to get the exact taste that I need. The outcome has been extremely satisfying and liked by all my friends that I shared this dish with.
About Masala Pav
Masala pav is an ideal appetizer for these troubled times when everyone is looking for options to save money.
It is a vegetarian dish with very few ingredients. All you need is onions, tomatoes, bread or dinner rolls, butter and some spices. Simple yet filling, it is a pocket friendly recipe that can be enjoyed in all seasons. I highly recommend using T2H Kolhapuri Masala powder for making the masala pav.

Ingredients
400g or 2 3/4 cups
finely chopped onion300g or 1 1/2 cups
finely chopped tomato60g butter
1 tbsp vegetable oil
2 1/2 tsp garlic paste
1/4 tsp turmeric powder
1 tsp red chilli powder
1 1/2 tsp kolhapuri masala powder
2 1/2 tsp mumbai pav bhaji masala
3/4 tsp salt (or as per taste)
1/8 tsp or 2 pinch red food color (optional)
10 – 12 pav or dinner rolls (horizontally cut in half)
1 cup cilantro / coriander leaves, chopped
Directions
- Making the masala stuffing
- In a saucepan / wok add oil, heat it. Then add salted butter. Heat it.
- Next add onions and saute the onions till they become soft and translucent.
- Add turmeric powder, red chilli powder, kolhapuri masala and pav bhaji masala. Blend everything together.
- Add garlic paste. Stir it.
- Next add finely chopped tomatoes, stir it.
- Smash the masala till everything combines together thoroughly.
- Add salt and combine with rest of the masala.
- Add red food color and blend it. This step is optional.
- Next add chopped cilantro. Mix it and cook further.
- The masala should be cooked till all ingredients are completely combined.
- Your masala for the masala pav is ready. This whole masala cooking process takes around just 15 minutes.
- Toasting the Pav
- Next slit the dinner roll / pav horizontally and apply salted butter to it.
- Toast the buttered side of dinner roll first.
- Flip the dinner roll / pav a minute later and toast the other side for just few seconds. Remove dinner roll from the pan.
- Apply thick layer of Masala on the inner side of the dinner roll. Your Masala Pav is ready to be served
